Winemaking Information

The fruit is pressed directly, then fermented and aged in 600L demi-muid and 1500L foudres (with a small amount in stainless steel). Sulfur specifics are: one gram per hectoliter added to destemmed grapes before fermentation with one to two grams added before bottling.
SO2: During winemaking, at bottling
Fining/Filtration: Filtration may occur depending on sugar levels
