Ull de Llebre

95% Ull de Llebre, 5% Malvasia de Sitges from an organically farmed vineyard of 34-year-old vines planted on clay at 408 meters elevation in Santes Creus. The grapes were harvested by hand and half went through carbonic maceration for 7 days, while the other half macerated on the skins for 3 days without disturbing the cap. After fermentation, pressed with a vertical press to stainless steel tank and neutral French oak barrel. The wine rested for 10 months before bottling without fining, filtering, or sulfur addition.
