Rosado

Roughly 75% Misión (aka Mission, aka País) and 25% Palomino from old, organically farmed ungrafted vines at the La Casa Vieja estate. These old own-rooted vines are particularly suited to the arid conditions in the area, and yields are low. A blend of the estate’s two main grape varieties, the Palomino and Misión for the rosado are fermented separately and blended before bottling. The Palomino is destemmed, foot-trodden, and fermented in ceramic Tinajas, while the Misíon is destemmed, foot-trodden, and fermented in neutral barrels. The two wines are blended and bottled without fining, filtering, or added sulfur.
