Winemaking Information
Whole clusters are gently foot trodden in an ancient vertical press. Spontaneous fermentation takes place without temperature control in small stainless steel tanks for two to three weeks. Aging is for six to eight months on the fine lees with repeated bâttonages in small stainless steel tanks. 10 to 20mg per liter of sulfur added one week before bottling.
